Recipe: Gluten Free Pizza


I love pizza! I dream about the day I am finally in Rome sampling authentic pizza all day with glasses upon glasses of good wine. This recipe is my attempt at making an easy, healthy, “pizza” at home that requires very little prep, effort and clean up. I know it’s not authentic and the brown rice torilla alone disqualifies it from having the “pizza” title but this totally hits the spot when you don’t feel like hitting up your local pizzeria.


  • Food for Life Brown Rice Tortilla
  • Bio Italia Tomato Paste
  • Organic Meadow Raw Milk Mild Cheddar
  • Cremini Mushrooms
  • Field Greens
  • Mini Tomatoes
  • Fresh Basil
  • Bell peppers, yellow, orange + red
  • Scallions
  • La Tourangelle Organic Extra Virgin Olive Oil Spray
  • Salt and Pepper


  1. Line two baking sheets with parchment paper
  2. Spritz bell peppers + onions with olive oil spray and bake on the first baking sheet for 20 minutes at 400 degrees celcius
  3. Place 1-2 tortillas on the second baking sheet
  4. Spread desired amount of tomato paste on tortillas
  5. Place all vegetables evenly on tortillas, putting the field greens on last
  6. Sprinkle with cheese, salt and fresh cracked pepper
  7. Place pizza in oven for 9-11 minutes, depending on desired level of crispiness
  8. Enjoy! (and of course serve with a glass … or two … of wine)
